Gorgonzola Cheese Balls

Serves 6-8

Ingredients

1/2 pound neufchatel cheese
1 ounce butter
1/4 pound gorgonzola
1/4 cup scallions, chopped
3/4 teaspoon garlic, minced
1/3 teaspoon salt
1/3 teaspoon pepper
1/3 teaspoon onion powder
1/4 pound cheddar cheese, shredded
1/2 cup toasted almonds, sliced
1/4 cup red pepper, diced
2 tablespoons parsley, minced

Instructions

In mixer, cream butter, then add neufchatel, creaming for 5 minutes. Add all other ingredients EXCEPT the almonds, red pepper and parsley, and mix just until nicely combined.
Chill 1-2 hours. Combine the almonds, red peppers and parsley on a plate. Form the cheese mixture into 1 large or 2 smaller balls, and roll in the almond mix. Chill before serving.
