Golden Potage Soup

Ingredients

1 1/3 tablespoons olive oil
1 cup leeks chopped
1 1/3 tablespoons garlic minced
1 1/2 cups sweet potato peeled and chopped
1/2 cups parsnips peeled and chopped
1/2 cups carrot peeled and chopped
1 1/2 cups potato peeled and chopped
4 cups vegetable stock
1 teaspoon salt
1/2 cup half and half
1 teaspoon dried thyme

Instructions

Sauté leeks or onions and garlic in oil for 5 - 8 minutes. Add the rest of the vegetables and sauté for 10 more minutes. Add stock and salt. Bring to a boil and then reduce heat to a simmer. Simmer for 30 minutes or until vegetables are tender. Puree with immersion blender (submersible blending wand, or carefully use a blender), stir in half and half, herbs and adjust seasoning. Serve.
