Goat Cheese Tacos

Ingredients

8°Flour tortillas, warmed
4 ounces creamy goat cheese, room temperature
1 cup vegetarian refried beans
2 jalapenos, sliced thin
2 tablespoons melted butter*

Instructions

Preheat oven to 400°F. Spread tortillas with equal portions of goat cheese. Add beans and jalapenos to each tortilla. Fold tortillas in half pressing down slightly and transfer to a baking sheet. Brush tops of tortillas with butter and bake them 5-10 minutes, until cheese is melted and tortillas are crisp. Serve at once.
*If you are concerned about fat and cholesterol, you can skip the butter but your tortillas will dry and curl around the edges in the oven.
