Gazpacho

Ingredients

2 1/2 pounds tomatoes -- cored & quartered
2 cucumbers -- peeled & seeded
1 bell pepper -- cored seeded & diced
3 tablespoons tomato paste
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cayenne
3 tablespoons olive oil
1 tablespoon balsamic or champagne vinegar
2 cups tomato juice

Instructions

Combine tomatoes, peppers, cucumber, tomato paste, olive oil and vinegar
in bowl. Pulse in food processor in small batches, making sure to retain some of
the texture. Return to bowl. Season with spices, stir in tomato juice
and chill for 2 - 3 hours. Taste and adjust seasoning.
