Garlic Mashed Potatoes

Serves 4-6

Ingredients

3 pounds red potatoes scrubbed and cubed
6 cloves peeled garlic
1 tablespoon olive oil
1/3 cup cream
1/4 cup butter
1/2 teaspoon black pepper
Salt to taste
Parsley chopped for garnish

Instructions

Place potatoes in large saucepan, cover with cold water and bring to a boil. Reduce the heat slightly and cook until tender. While potatoes are cooking, slowly sauté garlic in olive oil until browned and soft. Drain potatoes and place in bowl. Combine garlic and cream in food processor. Add to potatoes. Add butter, pepper, and salt. Blend just until potatoes are broken down some and other ingredients are incorporated. Garnish with parsley.
