Fresh Orange Salsa [WF/GF/DF]

A nice winter salsa using the best oranges of the day. Try the Cara Caras! Nice over fish, chicken, pork, scallops, etc.

yield: 2 cups

Ingredients:
1 tablespoon olive oil
1 teaspoon minced garlic
1 tablespoon minced fresh ginger
1/4 teaspoon lg. grind black pepper
1/4 teaspoon cayenne pepper
1/4 c. lime juice
1/2 teaspoon salt
1 tablespoon honey
1/3 cup red onion, tiny dice
1/4 cup minced fresh cilantro
3 tablespoons minced roasted red peppers
2 large navel oranges, small dice

Instructions:
1. In olive oil, sauté the garlic, ginger, black pepper and cayenne until garlic for 3 minutes. Place in non-reactive bowl (glass best, then stainless)
2. Add the salt, lime juice and honey and mix well.
3. Add the rest of ingredients as you chop them. Mix well and let sit in fridge for 1 hour before serving.
