Fiery Ginger Pumpkin Tomato Soup [WF/GF/DF]

Serve 4-6

Ingredients

1 tablespoon organic olive oil
1 cup chopped leeks
1 tablespoon minced fresh ginger
1 - 14 oz. can organic diced tomatoes
1 tablespoon minced organic garlic
1 tablespoon honey
5 cups vegetable broth
2 pounds organic pumpkin or winter squash, peeled, seeded and diced
Salt to taste

Instructions

In large stockpot, heat olive oil. Add leeks and sauté over medium-high heat. Add ginger and garlic. Sauté until fragrant, about 2 minutes. Stir in tomatoes and honey. Simmer 15 minutes. Stir in broth, pumpkin and salt. Bring to a boil, reduce heat and simmer until pumpkin is tender. Taste, adjust seasoning and serve.
OPTIONAL: Add one diced jalapeno with the ginger and garlic.
