Fennel Pizzas with White-Bean Puree

Ingredients

Plenty of flavor (but very little fat) in this protein-packed pizza!

2 small fennel bulbs (about 8 ounces each)
2 tablespoons olive oil
3 to 4 cloves garlic, minced
Salt and freshly ground pepper to taste
1 (15-ounce) can white beans, drained, rinsed
2 tablespoons water
3 (7-inch) pita breads or pizza crusts
Extra-virgin olive oil
1/4 cup grated Asiago cheese or nondairy alternative

Instructions


Heat oven to 400°F. Trim fennel stalks, leaving only an inch or two. Split fennel bulbs in half; cut out small, hard cores. Thinly slice fennel; place slices in bowl. Add 2 tablespoons olive oil, garlic, salt and pepper. Toss well; place fennel slices in roasting pan. Roast fennel about 10 minutes or until tender.
