Doug's Apple-Berry Cobbler

Use your favorite berry to compliment the apples. Serve warm with ice cream or whipped cream.

Ingredients

FILLING:
3 cups cubed apples (I used Honeycrips)
1 cup organic sugar
1 teaspoon minced lemon zest
1 1/2 tablespoons flour
10 oz. frozen berries (I used blackberries)
BISCUIT TOPPING:
3/4 c. + 2 tablespoons flour ( I used 1/2 white all-purpose and 1/2 whole wheat pastry flour)
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1 1/2 teaspoons sugar
1 oz. grated 3 yr. old Gouda
3 tablespoons Pastureland butter
3 oz. half and half (cream)

Instructions

PREHEAT OVEN TO 425°F
1. Peel and cube apples. Mix 1 cup sugar with 1 1/2 tablespoons flour and then mix with apples and lemon zest in saucepan. Bring to boil and cook 5 minutes. Add frozen berries and just warm up. Pour into greased 8x8 baking pan.
2. Sift flour with salt, baking powder and sugar in a medium bowl.
3. Add grated gruyere (use course/lg. grate).
4. Add butter using the grater, and keep tossing with flour to keep separated. Break up a little with your fingers.
5. Add cold cream, and mix with spoon till dough-like. Roll on floured board until size of baking pan, brush off extra flour, and place on top of apple/berry mix. Make it look nice on edges.. some trimming or fluting may be called for.
6. Bake for 20-30 minutes until biscuit is done. Allow to cool a little before serving.
