Dairy-Free Pesto [WF/GF/DF/V]

Ingredients

2 cloves garlic
1 1/2 cup basil leaves
2 cups parsley leaves
4 oz. tofu
2 tablespoons lemon juice
1/4 cup olive oil
1/3 cup pine nuts or walnuts
salt and pepper

Instructions

Combine all in food processor or blender, and process until smooth.
