Cucumber Salad (Middle East)

While in college I made many friends from all over the world. Some of them where from the Middle East and we would get together for large meals almost every week. Even the men would take their turns during the rotation, if not held at their home, they would bring the food with them.

Yield: Serves 4-6

Ingredients:

2 cucumbers, peeled and sliced
1 medium onion, diced
1 cup yogurt
salt and pepper, to taste

Instructions:

Combine all of the ingredients into a medium sized bowl. Cover and refrigerate at least 1 hour for flavors to blend.
