Creamy Asparagus Soup

Ingredients

3 medium potatoes -- scrubbed and sliced
2 pounds asparagus -- trimmed and sliced
2 tablespoons canola oil
1 1/2 cups onion -- diced
5 cloves garlic -- minced
2 tablespoons flour
2 1/2 cups milk -- can substitute soy or rice milk too
1 teaspoon salt
2 tablespoons fresh basil -- chopped

Instructions

Bring 2 1/2 c. water to a boil. Add the potatoes and cook until almost tender. Set aside tips of asparagus. Add remaining pieces of asparagus to potatoes. Simmer 5 minutes. Heat oil in skillet, add onions and garlic and sauté until soft. Stir into asparagus. Puree in batches and return to pot. Whisk flour into milk until smooth. Stir into asparagus in batches. Season to taste and heat through.
