Craisy and Wild [WF/GF/DF]

Ingredients

1 2/3 cups wild rice
3 1/3 cups water more if needed
1 bunch scallions sliced
1 cup mandarin oranges
2/3 cup craisins soak in hot water
1/4 cup slivered almonds toasted
1/4 cup pecans toasted

DRESSING: 4 1/2 tablespoons olive oil
1 1/4 teaspoons lemon juice
1 2/3 teaspoons rice vinegar
1 large oranges zest and juice
3 tablespoons fresh mint minced (measure firmly packed)

Instructions

Cook rice in water until tender (Always cover the rice when cooking itsp.) Drain and cool. Mince scallions and then cut mandarin oranges into slices. Drain craisins. Mix up dressing separately and toss with rice, oranges, craisins, nuts and scallions.
