Country Captain Soup [WF/GF/DF]

Ingredients
1 2/3 tablespoons olive oil
3 medium onions dice
2 green pepper diced
2 1/2 teaspoons garlic minced
2 3/4 cups chicken cooked and diced
1 2/3 tablespoons curry powder
1 2/3 teaspoons fresh ginger root grated
dash cayenne
6 3/4 cups water
27 oz. Tomatoes, crushed/canned (approx. 2-14.5 oz cans)
3 large Granny Smith apples cored and diced
1/3 cup orzo
1/4 cup currants
Instructions
Sauté onion, pepper and garlic in oil. Add chicken, curry, ginger, and cayenne. Sauté 2 minutes. Add water, tomatoes and apple. Stir in orzo and currants into soup and simmer until orzo is tender. Season to taste with salt and pepper. Serve.
