Cornbread
Serves 6 - 8
Ingredients
1 cup unbleached flour
1 cup cornmeal
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup sugar or 2 tablespoons honey
1 large egg
1 1/4 cup buttermilk
3 tablespoons melted butter or vegetable oil
Instructions
Preheat oven to 400°F. Grease an 8-inch square baking pan. In a large bowl, combine flour, cornmeal, baking powder, salt and sugar (if using honey, add with moist ingredients). In a small bowl, combine egg, buttermilk and melted butter or oil. Stir into dry ingredients just until blended. Pour into prepared baking dish. Bake 20 - 25 minutes or until golden on the top and toothpick inserted in center comes out clean.
