Coconut Curry Poached Cod [WF/GF/DF]

Great with Thai Kitchen stir-fried noodles, or just over rice. This recipe would work well with other mild fish like halibut, talapia or trout.
yield: 4 servings
Ingredients:
1 tablespoon canola oil
1 1/2 teaspoon mustard seeds
1 tablespoons minced fresh ginger
2 tablespoons curry powder (hot or mild, your choice. Add cayenne for even hotter)
3/4 teaspoon salt
1 cup slivered onions
1 red bell pepper, diced
2 cups diced eggplant
1-14oz coconut milk
2 tablespoons minced fresh cilantro
4 lg. pieces cod
Instructions:
1. In oil over medium high heat, saute the mustard seeds until they stop making a popping sound.
2. Add onions, peppers, eggplant and ginger and lightly brown.
3. Add curry powder and salt and saute 5 minutes.
4. Add coconut milk and bring to simmer.
5. Add fish and cilantro and simmer till fish is done, about 6 minutes.
