Chili Pita Pizzas
You can replace the canned chili with 2 cups leftover homemade chili. Another variation: Use hot pepper jack cheese instead of Cheddar. Place toppings in individual bowls and let dinner guests make their own pizzas. Serve with a tossed spinach salad and fresh mango slices.
Ingredients
4 pita bread rounds or wheat-free alternative
1 (15-ounce) can vegetarian chili
1 cup (4 ounces) shredded Cheddar cheese or nondairy alternative
1 bunch green onions, sliced
1 small green bell pepper, diced
1 medium tomato, diced
Sour cream, optional
Fresh cilantro
Instructions
Heat oven to 450°F. Place pita rounds on a baking sheet; spread each with about 1/3 cup chili. Sprinkle cheese, onions and bell pepper evenly over pizzas. Bake 8 minutes or until cheese melts. Remove pizzas from oven. Top with tomato, sour cream and cilantro.
