Chicken Egg Drop Soup [WF/GF/DF]

A delicious 15 minute `homemade' soup gets a head start from Imagine's Organic Asian Chicken Broth.

Ingredients
2 quarts Imagine Asian Chicken Broth
10 oz. chopped red bell peppers
2 eggs, beaten
3/4 lb. boneless chicken breast, diced
1 8 oz. can bamboo shoots, chopped smaller
1/4 lb. snow peas, cleaned and slivered
salt and pepper to taste.
Instructions
In a large saucepan, bring the chicken stock to a boil over medium heat. Meanwhile, cut your veggies, setting aside and cut your chicken last so you are done using chopping board. When stock is boiling, add the red pepper. When back to boil, very, very slowly, pour a very thin stream of eggs into the soup while slowly stirring with a spoon. When done, add chicken. Keep below a simmer until chicken is cooked (not pink in the center of your larger pieces). Stir in the bamboo shoots and snow peas, and season with salt and pepper. Serve immediately.
