Big Bill's Buffalo Meatloaf

Ingredients
2 lb Buffalo Gal ground buffalo
1 c. dry bread crumbs
1 teaspoon salt
1 teaspoon freshly gr. black pepper
1/2 teaspoon garlic powder
2 eggs
1/2 c. soy (or regular) milk
1/4 c. firmly packed minced parsley
1/2 c. red onions, minced
1/4 lb crimini mushrooms, minced
1/4 c. SanJ Asian BBQ Sauce
1 tablespoon honey
Instructions
Preheat oven to 325°F
In a large bowl, mix bread crumbs and spices. Add eggs, honey, SanJ Asian BBQ sauce and milk, and mix well. Let sit 5 minutes. Mix in minced veggies till evenly distributed, then gently mix in the meat. Scoop into a 5X9 loaf pan (or form loaf on greased cookie sheet). Bake in preheated oven for 50-60 minutes until completely cooked through (internal temp. 150°F). Let stand 5 minutes before serving.
