Basic Miso Soup [WF/GF/DF/V]

Standard fare among vegetarians and the Japanese, miso soup is healthy and easy with Imagine California Miso Stock.

Ingredients
2 quarts Imagine California Miso Stock
1/3 lb. carrots, thin half crescents
1 lb. Seapoint Farms shelled Edamame
6 oz. red onion, diced
1 lb. extra-firm tofu, sm. dice
wheat-free tamari and pepper to taste
Instructions
In a large saucepan over medium heat, bring stock up to simmer (not boil). Add carrots, onions and edamame, and simmer 5 minutes. Add tofu and simmer 5 minutes. Add wheat-free tamari and pepper to taste.
