Baked Chicken with Mushroom Sauce [WF/GF]

This is and easy and healthy way to enjoy chicken. Try some organic chicken with this one!

Yield: Serves four

Ingredients: 

2 chicken breasts, skin-on
4 cups sliced mushrooms
4 tablespoons olive oil or butter
2 cups chicken broth
1 tablespoon arrowroot mixed in one tablespoon water
1 teaspoon or more wheat-free tamari sauce

Instructions:

PREHEAT OVEN TO 350°F.
Place the chicken breasts in a baking dish and put them into the oven. Bake for approximately 25 minutes or until the internal temperature of the meat is 170 degrees (check with an instant read thermometer). While the chicken is cooking warm the oil or butter in a large skillet. Add the mushrooms to the oil and cover. Reduce the heat to simmer on the pan and cook for 10 minutes. Boil the chicken broth in a large sauce pan until it is reduced to one cup. Remove the chicken from the oven. Add the juices left in the pan from cooking the chicken into the liquid. Add the mushrooms to the liquid. Thicken the liquid to sauce consistency by stirring in the arrowroot mixture. Season with tamari.
