Arrabiata Angel Hair

Ingredients

1 1/3 tablespoons olive oil
1 zucchini, diced
1 green bell pepper, diced
1/3 eggplant, diced
1 teaspoon garlic, minced
3 pepperoncini, diced
3 cups canned diced tomatoes
3 cups tomato puree
1/3 bunch parsley, chopped
1 teaspoon fresh basil, chopped
1 tablespoon oregano
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1 pound angel hair pasta

Instructions

Cook pasta until al dente. In large stockpot, heat olive oil. Add zucchini, bell pepper, eggplant and garlic. Sauté 7-10 minutes. Stir in the pepperoncini, diced and pureed tomatoes and parsley, basil, oregano, crushed red pepper flakes, and salt. Simmer 30 minutes. Toss with pasta. Serve.
