African Peanut Pineapple Stew

Serves 4

Ingredients

1 tablespoon vegetable oil (or peanut oil)
1 cup diced onion
2 cloves garlic, minced
1 bunch broccoli, cut into florets
1 bunch kale, chopped (about 4 cups)
1/2 cup cooked millet
1 cup vegetable broth
1 - 20 ounce can crushed pineapple
1/2 cup peanut butter
1 tablespoon hot pepper sauce (like Tabasco)
1/2 cup chopped cilantro
salt to taste
For Garnish:
crushed peanuts
chopped scallions

Instructions

In covered saucepan, heat peanut oil. Add onion and garlic and sauté until tender. Add kale, broccoli, vegetable broth and pineapple. Cover and simmer for about 5 minutes or until vegetables are just tender. Stir in cooked millet, peanut butter, hot sauce and cilantro. Season to taste with salt and serve with garnishes.
