A Gouda Corn Pudding [WF/GF]

Great with steak, pork or chicken, and very warming on a winter night.
yield: 4 servings
Ingredients:
1 teaspoon butter
1– 10 oz. bag frozen corn
1/3 bunch scallions, minced
1 cup heavy cream
2 pinches salt
1 pinch pepper
1 1/2 oz. aged gouda, grated
Instructions:
PREHEAT OVEN TO 350°F
1. butter a small (9”x9”) baking dish.
2. pour in frozen corn.
3. Add salt, pepper and scallions. Mix.
4. Pour over the cream evenly. Sprinkle on the grated cheese.
5. Cover with foil, and bake 40 minutes covered.
6. Bake another 20-30 minutes uncovered till bubbly and lightly browned.
